Indian cucumber-root

Indian cucumber root should be grown in shade, in rich soil. The rhizome is delicious raw, when it is crisp like a radish or cucumber. It can also be boiled like a potato, or pickled. First Nations used Indian cucumber root as bait, by attaching a piece of crushed root to a fishing hook. In the past, the leaves and berries were made into an infusion and used to treat convulsions in infants.
