Origin and description

Summer savory is native to the Mediterranean. It has a spicy, peppery scent similar to thyme and mint. Its leaves and flowers can be used to flavor meals.
Cycle: annual.
Spacing: 25 cm.
Height: 30 cm.

The 'Aromata' cultivar is more compact and has a higher concentration of the essential oil.

Exposure: Full sun.

Pruning and maintenance

Pinch back regularly.

Propagation

Sow seed indoors in March-April.
Sow seed outdoors in May.

Use

Culinary use: The leaves and flowers can be used to flavour salads, soups, meats and vinegars. Savoury combines very well with chervil and tarragon.
It is often added to legumes because of its ability to neutralize flatulence.
